I have liked the idea of experimenting with ethnic food for probably a good while now. I checked out a couple of books from the library and didn't get past reading and looking for a bit. I could have just returned them and put it off, but I'm glad I didn't.
I started with India--land of color and spices. :)
I took my recipes from "Cooking the Indian Way" by Vijay Madavan.
To drink: mango lassi
Main course: yogurt chicken
Chapatis:unleavened whole wheat bread
A chutney (comprised manely of cilantro) eaten with the bread
Cucumber and tomato yogurt (also for the bread but tasty plain)

*This recipe is delicious when used as a dip with corn chips. It makes a nice quick meal. I also think it would be good made in advance and served at a party.
Cucumber and Tomato Yogurt/Kheera-Tamatar Raita:
2 c. (16 oz.) plain yogurt
1 medium tomato, chopped
1 peeled cucumber, chopped
1 small onion, chopped
3 tbsp. chopped cilantro
salt and pepper to taste
dash of cayenne pepper (optional)
1. In a bowl, beat yogurt until smooth. Combine yogurt with
remaining ingredients and mix well.
2. Cover bowl and chill at least 1 hour before serving.
The bread and yougurt look SO good! And your dishes are darling........
