I took some guidance from probably a couple of recipes; but this potato salad came out basically my own. Some of the instructions may be a bit like those you might receive from your grandmother “’til it’s done” “’til it looks right”; but it’s simple to make. :)
Ingredients:
5 lbs. new potatoes cut into about 1 in. pieces
1 green bell pepper chopped
1/2 red onion finely chopped
2 tomatoes chopped
1/4-1/2 cup Dijon mustard
1 1/2-2 cups real mayonnaise
salt
Instructions:
Cook the potatoes in salted, simmering water until tender and easily pierced with a fork, drain, then pour potatoes into a large bowl. Put the next three ingredients on top of the potatoes. With the mustard and mayonnaise, start out by stirring in the the smaller amount; then, if need be, keep adding until everything is nicely coated. Serve cold or at room temperature. Can be made ahead for a party. Would probably serve at least 10 to 12 people.
