Blueberry-Mango Parfaits

I wanted a snack the other night and made something up. That snack inspired me to invent these parfaits! :)

Ok 1-1/2 c. flaked coconut mixed with

1-1/2 c. of hearty cereal (so it will stay dryer longer)

24 oz. plain yogurt

1 pint blueberries mixed with

1 mango (diced)

and honey for drizzling

*Repeat layers in this order:

*cereal mixture

*yogurt

*drizzle of honey

*fruit

Serves: 6

Good for breakfast, lunch, or a bedtime snack! :)

Dad’s Cake

I made a Black Forest Cake for my Dad’s birthday today. :) It’s made with golden butter frosting (yum!) and a sauce made with dark cherries instead of tart.

I hadn’t originally planned on using dark cherries, but I ended up really liking the color combination of the sauce and the frosting. :)

Frosting cakes has been a bit of a Waterloo for me (at times) in the past. I can’t say that I am completely out of the woods yet, but this one didn’t give me too much grief. :)

Shopping In Walnut #1

15 Sleeves and Little Cakes

I plan to start adding original artwork to my shop! (Doesn’t that look nice in magenta?) I have 15 protective sleeves in which artwork can be mailed to customers, and 15 items that I want to either sell or remove in the near future. Starting Monday, and not blogging Sundays, I would like to post a piece of artwork every day for 15 days. :)

On a different note, I recently made a recipe for Red Pepper Cheesecake. (Just think of it as a super creamy dip.) :) Instead of using the recommended spring form pan, I divided the mixture into two ramekins, and baked them in a water bath. We bought pita chips from the store; but the recipe for the cheesecake also contains a recipe for homemade pita chips. Yum! :)
